Festive Bite-Sized Treats: How to Utilize Christmas Leftovers into NYE Appetizers
What kinds of canapes can I whip up for New Year’s Eve using my Christmas leftovers that will still impress guests?
Finger food needn't be elaborate, so New Year's presents a perfect opportunity to use up what's left. The key rule is to keep things to just one bite—no one wants to handle a fork. Guests just want a comforting taste of hearty fare with a luxurious touch.
If you have a bit of smoked salmon left, place it on blinis and crown it with affordable roe. Mini fishcakes are also just the ticket: If you have remaining fish or flaked salmon, fold it through mashed potato, combine with dill, citrus, and caramelized onions, then roll in panko and deep-fry.
You could also have a ball with croquetas. Make the bechamel up to days ahead, then use leftover ham, chicken, or foraged fungi for the interior. Whizz old bread into breadcrumbs to cover them, then cook until crisp. Savoury pastry mixtures are another natural home for those breadcrumbs, or use them as a coating for bite-sized chicken. For flavour, all you need a bit of lemon zest and aromatic herbs, and they'll taste so much more. As an aside, croissants make superb coatings, too.
One beloved treat at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Get some ham and turkey in an airtight container and freeze. While you're at it, set aside some cranberry sauce and honey ham glaze in the refrigerator. When needed, defrost the meat, then place it in a hot oven with the saved glaze for a brief period. Let it cool and cut into thin pieces, then lay on top of some sourdough and start building mini sandwiches with lots of tangy sauce. Cut into small squares for a winner.
Remaining poultry, meanwhile, could be turned into a spicy, crisp salad. There’s always a bit of dark meat left over, and it's perfect for something punchy. Pull the meat, then fry it slowly in a pan, and toss with remaining sauce loosened with lime juice, a dash of soy and a little spicy oil. Finish with chopped herbs and some sliced spring onion, and present in small lettuce cups.
Revamping Remaining Veg
Veg, meanwhile, can be scrubbed up and fit for a party with a big batch of bubble and squeak. Mix all your remaining vegetables with herbs, then add salt and pepper and add flour. Stamp out portions to roughly the size of blinis, then store in the icebox. Reheat in a preheated oven for a short time and finish with whatever you like—perhaps sliced beef and sharp horseradish. A good tip, though: save a stash for a late breakfast the next day.
